Page 710 of the Microsoft Excel "User's Guide," version 5.0, states that you can change the icon of an embedded object by using the Change Icon button. This information applies to Microsoft Excel for Windows only.

In Microsoft Excel 5.0 for Windows, to display an object as an icon, you can choose Object from the Insert menu and select the Display As Icon check box. When you select this check box, a Change Icon button appears that lets you browse through directories for a DLL or other file that holds the icons you want. In Microsoft Excel 5.0 for the Macintosh, you can select the Display as Icon check box, but the Change Icon button is unavailable. This is expected behavior; the error is in the documentation only.
